KOLACH                                                Kitchen of Mary Kovacsics Lott


2 sticks butter
1 egg plus 4 egg yolks (extra large)
½ c sugar
2 yeast cakes or dry yeast packets
1c warm milk
1 tsp salt
1 Tbsp vanilla
1 Tbsp lemon juice
5 C sifted flour

Dissolve yeast in ½ C of the warm milk with 1 tsp sugar. Let rise until light for about 30 minutes.

Cream butter, add sugar, eggs, vanilla, lemon juice and other 1/2 C milk and yeast mixture.   Add sifted flour and knead the dough for about 5 minutes.   Should pull away from the sides of the bowl  as you are kneading and be soft and stretchy,  if you have the right amount of flour. If you have too much flour add warm milk. cover bowl and put in a warm place to rise until double.  I warm the oven and then turn it off (should be about 100 degrees f).  May need to rewarm it, may take up to 3h to rise.


6 c grated walnuts
1 ½ c sugar
2 Tbsp vanilla
1 tsp lemon
½ c milk

cook on very low heat, stirring frequently so it does not burn until dark brown  (about 30 minutes).   cool.

Divide dough into thirds and roll into a rectangle.  spread the cooled nut miixture.  roll into a loaf, place onto baking sheet seem-side down.  brush top with melted butter or egg wash (1 egg + 1t water). I sometimes allow it to rise for a little while before baking.  Bake 350 degrees for 30 minutes.
